Kinda tired, so I'll make this short.
Spring scramble for breakfast. A great way to get lots of veggies into your day and off to a flying start.
BLT with avocado spread for lunch. Totally scrumptious. BLTs are one of my favorite meals.
Dinner was Everyday Paleo spaghetti. I used spaghetti squash for the pasta, and did a combination of ground beef & italian turkey sausage for the meat. Very yummy.
I'm always excited when dessert is offered. We had baked apples. I stuffed mine with coconut cream concentrate as well as raisins, coconut, and spices. It reminded me of apple pie, and what apple pie is complete without ice cream?
I made my ice cream using coconut milk, la crema cinnamon vanilla coffee creamer, frozen cherries, and cacao nibs. Cherry Garcia may now bow down to me!
Props to my phenomenal hubby who was instrumental in helping me get both lunch & dinner on the table in a time crunch today.
