Everyday Paleo, Day 10

Last night I noticed that breakfast was paleo apple banana muffins I have made before. I knew how I wanted to make them, but it was 11:30p and I wasn't about to stay up til midnight just to make muffins for hubby's breakfast. He said he was happy with his youbar anyway.
X-Men First Class was an okay movie. It got me thinking about my ginormous thighs. I've gotten so many compliments on the one feature I've hated the most about myself that I'm starting to embrace the concept "Mutant and proud". The more compliments I get, the more I want to work on getting them down to where I'm happy. I want to see how hard I can push them. I want to run until my heart bursts or my legs break, whichever comes last. I can't sustain a run for very long, maybe 1/4 mile, but I'm getting there.

So this morning I made the muffins, and I was really excited about it cuz there was BACON. I've said it before, and I'll say it again. Three things in the world make life infinitely better: chocolate, bacon, and cookies. If you're having all of them at the same time, you're having a pretty fantastic moment.
Anyway, breakfast was muffins, bacon, and eggs over easy. I was super happy. Last time I made the muffins, Andy complained they weren't sweet enough, so this time I added 1/4 cup powdered stevia. Also, I've decided that flax meal is cheaper and more practical than almond meal, so I used flax meal in the recipe this time. They turned out great! In all fairness to the Sarah & Sarah endeavour, I DID make them as per the recipe... last month :P

My succulent breakfast:

After my apple flax carb up, it was time for game on. I went to the gym for the first time in several weeks. I was determined to push myself. I set new PRs: 60 lb pec fly, and 100 lb chest press. After the weight room, I hopped on the hamster wheel (treadmill) and beat out a 12 min mile, also a new PR. I normally run a mile in 14 mins. I think 2 mins off a mile is pretty huge.
When I was done with that, Grace & I went to the park by the gym. I laid out a blanket, put a little sunscreen on Grace, some tanning oil on myself and just vegged for an hour. It was great. Roasted 10 mins on each side (left, right, front, bank). My arms itch like crazy, so I'm pretty sure I got some new color on me. After this post I will hop in the shower and then rub on my vampire cream. I call it my vampire cream, cuz it's got mica on it and makes me glitter when the light touches my skin. If you know anything about Twilight, you will find this "vampire cream" very funny.

After the park, I went to Target. I needed ham steak for dinner, and I was out of allspice & nutmeg- 2 of my favorite spices. Also, Andy said I could get Grace new shorts for the summer (which is great, cuz Target has a bunch for $4.50 each, so I got her a bunch). I also picked up cardamom, cuz I want to play with it. I love having a well stocked spice cupboard!
Got home, and Grace just wanted cheese & papu for lunch. Got her squared away with lunch & a movie which gave me a minute to get my leftover chili warmed up and breathe. I was less of a monster today, post-workout. Maybe it was the sunbathing at the park. Grace also had a container of skyr yogurt. I had a coupon for it, so Andy & I stopped by Harmons after the movie last night and used the coupon. I got an orange ginger & a pomegranate one. Grace wanted the orange one. I tried a bite & did not like it, but Grace apparently did cuz she ate the whole thing. It's even thicker than Fage Total. I didn't think that was possible.
Grace went down for a nap shortly after, and so did I.

When she got up, she wanted to watch Tangled. I put it on, and the neighbor came over & asked to borrow our mower. I went out to the shed to open it, got the mower for her, and figured it was as good a time as any to finally transplant my back porch garden. Grace's strawberries got moved to a much bigger pot with organic soil.

My rosemary, thyme, purple bell pepper, and Grace's mini tomatoes got moved to the green planter by the door.


Andy will move my raspberry, blackberry, and golden berry plants to the back lot along our porch, and the zucchini & crookneck squash will get moved into the pots that the berries were in. I'm just worried about what to do with them when winter comes. Will have to research that.
I already have neighbors asking me for cuttings of my organic plants. It makes me feel good inside, like I'm at least doing something right.

I came in after transplanting and lost track of time. When I looked up it was almost 6. Dinner should have gone on 1/2 an hour ago!
I started pulling the ingredients together. Asparagus stuffed chicken breast. Except, I soon realized, what was in the fridge was chicken thigh-- NOT CHICKEN BREAST. *Head-desk*. It was too late to fix, so I just went with the chicken thighs, and trimmed them of the fat. Blanched the asparagus, and chopped up the ham steak. Andy came home, and I was a little flustered.
Does anyone know how slippery beets are? It's ridiculous. I've tried beets a number of times in the past & always hated them. They were the canned/jarred kind, so maybe they were pickled or something? Anyway, this slippery little fellow was totally GROOVY after I peeled 'em.

As I looked ahead at the instructions, I noticed that the roast vegetables I was preparing took an HOUR, and at 50 degrees hotter than the chicken. This got me kinda upset (along with the beets flying everywhere as I tried to chop them) and I sort of started Yosemite Sam-ing. Andy grabbed the knife from my hand and chased me out of the kitchen. We got the beets, parsnips, carrots, and garlic into the oven just as the chicken was coming out.
By the way, have you ever had parsnips? When I went to buy them, I confessed to the cashier that I had to google them before coming to the store, just so I knew what I was looking for. They are big, white, carrot-looking things, and kind of taste like a cross between a carrot and a sweet potato.
The beets were delicious. First time I've liked them. And can we just say that this recipe (the roasted root veggies) is DESSERT worthy? That's right, you heard me! DESSERT. So sweet and succulent. It was like eating candy. So maybe it wasn't so bad they came out after I finished my chicken.
Lucky for you there was leftover chicken willing to stand in for a quick photo with the veggies.
